Courgette Noodle Carbonara
Silky carbonara over spiralised courgette — all the comfort of the classic at just 6 net carbs, no pasta required.
Ingredients
- 2 large courgettes, spiralised
- 100 g pancetta, diced
- 3 egg yolks
- 50 g parmesan, grated
- 1 garlic clove
- 1 tbsp olive oil
- black pepper
Method

Whisk the egg yolks with the parmesan and plenty of black pepper; set aside.

Fry the pancetta in the oil until crisp, add the crushed garlic for the last minute.

Add the spiralised courgette and toss for 1–2 minutes just to warm through — do not overcook.

Take the pan off the heat, then stir through the egg-and-cheese mix so it forms a glossy sauce.

Serve immediately with extra parmesan and pepper.
