Ingredients

  • 40 g chia seeds
  • 250 ml unsweetened almond milk
  • 60 ml double cream
  • 2 tbsp powdered erythritol
  • 1 tsp vanilla extract
  • pinch of salt

Method

    Whisk the almond milk, cream, erythritol, vanilla and salt together.

    Stir in the chia seeds until evenly dispersed.

    Wait 5 minutes, then stir again to break up any clumps.

    Cover and chill overnight, or for at least 4 hours, until thick.

    Spoon into glasses and top with a few berries to serve.
