Ingredients

  • 700 g chicken thighs, diced
  • 400 ml coconut milk
  • 100 g baby spinach
  • 1 small onion, sliced
  • 3 garlic cloves
  • 1 tbsp fresh ginger, grated
  • 2 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tbsp coconut oil

Method

    Soften the onion in the coconut oil, then add the garlic and ginger.

    Stir in the garam masala and turmeric and toast for 1 minute until fragrant.

    Add the chicken and brown all over.

    Pour in the coconut milk, season, and simmer gently for 18–20 minutes until the chicken is cooked.

    Wilt in the spinach for the final 2 minutes and serve over cauliflower rice.
