No-Bake Keto Cheesecake
A creamy no-bake cheesecake on an almond-butter base, sweetened sugar-free — 5 net carbs a slice.
Ingredients
- 120 g almond flour
- 60 g butter, melted
- 400 g cream cheese
- 250 ml double cream
- 100 g powdered erythritol
- 2 tsp vanilla extract
- 1 tbsp lemon juice
Method

Mix the almond flour with the melted butter and 20g of the erythritol, then press into a lined 20cm tin.

Chill the base while you make the filling.

Beat the cream cheese with the remaining erythritol, vanilla and lemon juice until smooth.

Whip the double cream to soft peaks and fold it through the cream cheese.

Spread over the base and chill for at least 4 hours, or overnight, until firm.

Slice and serve with fresh berries.
