Ingredients

  • 600 g beef mince (20% fat)
  • 1 red pepper, diced
  • 400 g chopped tomatoes
  • 1 small onion, chopped
  • 3 garlic cloves
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp chilli powder
  • 150 ml beef stock

Method

    Brown the mince in a large pan, then push to one side and soften the onion, pepper and garlic.

    Stir in the cumin, paprika and chilli powder and cook for 1 minute.

    Add the chopped tomatoes and stock, season, and bring to a simmer.

    Cook uncovered for 25–30 minutes, stirring occasionally, until thick and rich.

    Serve topped with soured cream, grated cheese and a scatter of coriander.
