Ingredients

  • 225 g halloumi, sliced
  • 1 avocado, sliced
  • 80 g rocket
  • 100 g cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 20 g pumpkin seeds

Method

    Heat a griddle pan and grill the halloumi for 2–3 minutes a side until golden.

    Toss the rocket, tomatoes and avocado with the olive oil and lemon juice.

    Pile the salad onto plates and lay the warm halloumi on top.

    Scatter with pumpkin seeds and a final squeeze of lemon, and serve.
