- 8 chicken thighs, boneless
- 200 ml double cream
- 100 g baby spinach
- 50 g sun-dried tomatoes
- 3 garlic cloves
- 30 g parmesan, grated
- 1 tbsp olive oil
Method

Season the chicken and sear in olive oil until golden on both sides. Remove and set aside.

Soften the garlic in the same pan, then add sun-dried tomatoes.

Pour in the cream, bring to a gentle simmer, and stir in the parmesan.

Add the spinach and let it wilt, then return the chicken to the pan.

Simmer for 8–10 minutes until the chicken is cooked through. Serve.
