Ingredients

  • 500 g broccoli, in florets
  • 600 ml chicken or vegetable stock
  • 150 ml double cream
  • 150 g mature cheddar, grated
  • 1 small onion, chopped
  • 2 garlic cloves
  • 30 g butter

Method

    Soften the onion and garlic in the butter until translucent.

    Add the broccoli and stock, bring to the boil, then simmer for 12–15 minutes until tender.

    Blend until smooth, leaving a little texture if you like.

    Stir in the cream and most of the cheddar over a low heat until melted; season.

    Ladle into bowls and finish with the reserved cheese.
