Cauliflower Fried Rice

Ingredients

  • 600 g cauliflower, riced
  • 3 eggs
  • 4 spring onions, sliced
  • 60 g frozen peas
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 garlic clove
  • 1 tsp fresh ginger, grated

Method

    Scramble the eggs in a hot wok, then remove and set aside.

    Add the sesame oil, garlic and ginger and stir-fry for 30 seconds.

  3. 3

    Tip in the riced cauliflower and peas and stir-fry for 5–6 minutes until tender.

    Return the eggs, pour over the soy sauce and toss through.

    Fold in the spring onions and serve straight away.
