Ingredients

  • 1 large avocado
  • 2 eggs
  • 20 g cheddar, grated
  • chives, chopped
  • salt and pepper

Method

    Preheat the oven to 200°C (400°F).

    Halve the avocado and remove the stone. Scoop out a little flesh so an egg fits.

    Place the halves in a baking dish, crack an egg into each, and season.

    Top with cheddar and bake for 12–15 minutes until the white is set.

    Scatter with chives and serve warm.
